Aspromytika Bean Salad
A vibrant and refreshing bean salad that’s as tasty as it is easy to put together. This version uses Lemnian Aspromytika beans.

Prep: 15 minutes | Cook: 15 minutes | Serves: 2
- 250 grams of Aspromytika beans
- 2 liters of water
- 5-6 tablespoons of olive oil
- 1⁄2 cup of lemon juice
- Salt and pepper to taste
- Freshly chopped seasonal vegetables (1⁄2 dry onion, 2 fresh onions, parsley, 1⁄2 Florina pepper, 1⁄2 tomato)
- Wash the beans and put them in a saucepan with 1 liter of water over high heat.
- When they come to a boil, remove them from the heat, wash with cold water and drain them.
- Place them back in the pan with the remaining liter of water, bring to a boil and lower the heat. Allow the beans to simmer for 15 minutes.
- Drain and put the beans in a salad bowl. Add the rest of the ingredients and mix well.
- Serve as a warm or cold salad. Enjoy!
