Mushroom and Acorn Burger

This hamburger recipe features one of the main riches of the Portguese montado – the acorn – an extraordinary culinary resource.

Prep: 10 minutes | Cook: 5 minutes | Serves: 1

  • 100 grams of mushrooms
  • 50 grams of acorn flour 
  • 1 onion
  • 30 grams of breadcrumbs
  • 1 can of red beans
  • 1 courgette
  • 10 ml olive oil
  • Chili
  • Basil
  1. Chop the onion.
  2. Using a food processor, grind the beans together with the mushrooms.
  3. Add the acorn flour to the mixture along with the chillies.
  4. Using breadcrumbs mold the mixture into small hamburgers.
  5. Drizzle olive oil into a non-stick frying pan and fry the hamburgers.
  6. Serve with a courgette and basil salad.
