Remojón Andaluz

Remojón Andaluz is a refreshing, cold Spanish salad made with cod, salty olives and lots of fresh citrus – perfect for a hot summer’s day.

Prep: 50 minutes | Cook: 0 minutes | Serves: 2

  • 500 grams of cod fish
  • 2 oranges
  • 1 small onion
  • 4 eggs
  • 60 grams of black olives
  • 75 ml of extra virgin olive oil
  • Coriander to taste
  1. Leave the cod to soak in water in a fridge for at least 12 hours.
  2. Drain the cod and roast it in the oven at 170 ° in the oven with a splash of olive oil.
  3. Crumble the cod and place it in a pan.
  4. Boil the eggs for 10 minutes.
  5. Chop the remaining ingredients and mix together in the following order: orange, cod, onion, hard-boiled eggs, black olives.
  6. Season with salt, and garnish with coriander and olive oil.
